Crockpot Carnival



Hey Everyone, Lindsay (at Passionatehomemaking) is doing a Nourishing Crock Pot Carnival...and I am joining in on the fun. I figured I would pass the word. I mean, you know what they say..."A Crock pot's a girl's best friend"...or was that Diamonds...or chocolate?

Anyway, this particular "Carnival" is focused on Crock Pot dishes with more of a "less processed" and"Whole Foods" identity (less additives and preservatives, no genetically modified ingredients, preparing food that is closer to it's original state, etc.)

For instance, If I wind up posting a recipe I have that originally calls for a packet of Lipton's Onion Soup and a can of Campbell's cream of Mushroom Soup...I would look for substitutions that did not include the Modified Food Starch or High Fructose Corn Syrup...and so on.

I bring this up to say...You can still use the recipes even if this sort of thing isn't "your bag" at the moment. Just substitute in your old favorites and ENJOY! I'm hoping to get some really great recipes...I need all the help I can get!

Shredded pork for burritos, made with pork loin, seasonings and garlic, then assembled with tortillas and toppings of your choice. Tasty burritos are made with shredded pork.
Ingredients:

* 1 pork loin roast, about 3 to 4 pounds
* 1 teaspoon salt
* 1/2 teaspoon pepper
* 2 medium cloves garlic, minced
*1 can diced green chilies
* 1/2 cup water (or green salsa- or both- just do half and half)



* 4 to 6 flour tortillas
* shredded Monterey Jack cheese, optional

* Topping Suggestions:
* chopped seeded tomato
* diced onion
* shredded lettuce
* sour cream
* cilantro
* guacamole
* shredded cheese
* sliced ripe olives

Preparation:
Place roast in a crockpot sprayed with nonstick cooking spray. Sprinkle with salt, pepper, then add minced garlic and water. Cover and cook on LOW for 9 to 11 hours, or until pork roast is very tender. Lift pork out of crockpot with slotted spoon. Shred and serve with warmed tortillas, with dishes of shredded cheese and your choice of topping ingredients at the table.
Serves 4 to 6.
